  • Red pepper flakes - 1/2 teaspoon
  • Vegetable broth - 250 milliliters
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and red pepper flakes to the skillet, sautéing for 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Add the chopped turnip greens to the skillet, stirring well to coat them with the oil, and cook for about 5 minutes until they begin to wilt.
  5. Pour in the vegetable broth and bring to a simmer, cooking for another 5 minutes until the greens are tender.
  6. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it directly to the skillet with the turnip greens.
  7. Toss everything together, adding reserved pasta water as needed to reach your desired consistency.
  8. Season with salt and black pepper to taste, and sprinkle with nutritional yeast if using.
  9. Serve hot, drizzled with a little extra olive oil if desired.
