- Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and red pepper flakes to the skillet, sautéing for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Add the chopped turnip greens to the skillet, stirring well to coat them with the oil, and cook for about 5 minutes until they begin to wilt.
- Pour in the vegetable broth and bring to a simmer, cooking for another 5 minutes until the greens are tender.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it directly to the skillet with the turnip greens.
- Toss everything together, adding reserved pasta water as needed to reach your desired consistency.
- Season with salt and black pepper to taste, and sprinkle with nutritional yeast if using.
- Serve hot, drizzled with a little extra olive oil if desired.
