Ingredients
- Pasta (preferably ditalini or similar) - 160 grams
- Potatoes - 300 grams, peeled and diced
- Olive oil - 3 tablespoons
- Fresh rosemary - 2 sprigs, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional) - for serving
Steps
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
- Add the diced potatoes to the pot and stir to coat them in the oil. Cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and add the chopped rosemary. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes, or until the potatoes are tender.
- Once the potatoes are tender, add the pasta to the pot. Stir well and cook according to the pasta package instructions, usually about 8-10 minutes.
- Season with salt and black pepper to taste. If the mixture is too thick, add a little more broth or water.
- Serve hot, drizzling a little extra olive oil on top and sprinkling with Parmesan cheese if desired.
