Ingredients

  • Pasta (preferably ditalini or similar) - 160 grams
  • Potatoes - 300 grams, peeled and diced
  • Olive oil - 3 tablespoons
  • Fresh rosemary - 2 sprigs, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - for serving

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
  2. Add the diced potatoes to the pot and stir to coat them in the oil. Cook for 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and add the chopped rosemary. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes, or until the potatoes are tender.
  4. Once the potatoes are tender, add the pasta to the pot. Stir well and cook according to the pasta package instructions, usually about 8-10 minutes.
  5. Season with salt and black pepper to taste. If the mixture is too thick, add a little more broth or water.
  6. Serve hot, drizzling a little extra olive oil on top and sprinkling with Parmesan cheese if desired.
