- Pasta (spaghetti or penne) - 200 grams
- Eggplant - 1 medium (about 250 grams)
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Fresh basil - 10 grams, chopped
- Pine nuts - 30 grams, toasted
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Capers - 1 tablespoon, rinsed and chopped
Steps
- Preheat the oven to 200°C (400°F).
- Cut the eggplant into 1 cm cubes, and spread them on a baking tray. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and black pepper, and toss to coat. Roast in the oven for 20 minutes until tender and golden.
- While the eggplant is roasting, cook the pasta in salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
- Add the cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften. Stir in the roasted eggplant.
- Combine the cooked pasta with the eggplant and cherry tomatoes in the skillet. Add a splash of reserved pasta water, lemon juice, capers, and chopped basil. Toss to combine and heat through for 2-3 minutes.
- Serve hot, topped with toasted pine nuts and grated Parmesan cheese.
