Ingredients

  • Pasta (spaghetti or penne) - 200 grams
  • Eggplant - 1 medium (about 250 grams)
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Fresh basil - 10 grams, chopped
  • Pine nuts - 30 grams, toasted
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Capers - 1 tablespoon, rinsed and chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the eggplant into 1 cm cubes, and spread them on a baking tray. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and black pepper, and toss to coat. Roast in the oven for 20 minutes until tender and golden.
  3. While the eggplant is roasting, cook the pasta in salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  4. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
  5. Add the cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften. Stir in the roasted eggplant.
  6. Combine the cooked pasta with the eggplant and cherry tomatoes in the skillet. Add a splash of reserved pasta water, lemon juice, capers, and chopped basil. Toss to combine and heat through for 2-3 minutes.
  7. Serve hot, topped with toasted pine nuts and grated Parmesan cheese.
