Ingredients

  • Eggplant (cubed) - 200 grams
  • Garlic (sliced) - 3 cloves
  • Olive oil - 3 tablespoons
  • Cherry tomatoes (halved) - 150 grams
  • Fresh basil leaves - a handful
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (grated) - 30 grams (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, toss the cubed eggplant with 2 tablespoons of olive oil, salt, and black pepper. Spread the eggplant on a baking sheet and roast in the oven for 20 minutes, or until golden and tender.
  3. While the eggplant is roasting, bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  4. In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the sliced garlic and sauté for about 1-2 minutes until fragrant but not browned.
  5. Add the halved cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften.
  6. Once the pasta is cooked, reserve a cup of pasta water and drain the rest. Add the drained pasta to the skillet with the tomatoes and garlic.
  7. Stir in the roasted eggplant and fresh basil, mixing well. If the pasta seems dry, add a bit of the reserved pasta water to reach the desired consistency.
  8. Taste and adjust seasoning with more salt and pepper if needed. Serve hot, topped with grated Parmesan cheese if desired.
