- Cherry tomatoes (halved) - 150 grams
- Fresh basil leaves - a handful
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (grated) - 30 grams (optional)
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, toss the cubed eggplant with 2 tablespoons of olive oil, salt, and black pepper. Spread the eggplant on a baking sheet and roast in the oven for 20 minutes, or until golden and tender.
- While the eggplant is roasting, bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the sliced garlic and sauté for about 1-2 minutes until fragrant but not browned.
- Add the halved cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften.
- Once the pasta is cooked, reserve a cup of pasta water and drain the rest. Add the drained pasta to the skillet with the tomatoes and garlic.
- Stir in the roasted eggplant and fresh basil, mixing well. If the pasta seems dry, add a bit of the reserved pasta water to reach the desired consistency.
- Taste and adjust seasoning with more salt and pepper if needed. Serve hot, topped with grated Parmesan cheese if desired.
