Ingredients

  • Pasta (preferably orecchiette) - 160 grams
  • Fresh fava beans - 200 grams, shelled
  • Garlic - 2 cloves, minced
  • Extra virgin olive oil - 3 tablespoons
  • Vegetable broth - 250 ml
  • Parmesan cheese - 30 grams, grated
  • Fresh mint leaves - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the shelled fava beans to the skillet and pour in the vegetable broth. Cook for about 5-7 minutes, or until the beans are tender.
  4. Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta and add it to the skillet with the fava beans.
  5. Toss everything together, adding a bit of the reserved pasta water if the mixture seems dry. Stir in the grated Parmesan cheese and chopped mint leaves. Season with salt and black pepper to taste.
  6. Serve immediately, garnished with additional Parmesan and mint if desired.
