- Fresh fava beans - 200 grams, shelled
- Garlic - 2 cloves, minced
- Extra virgin olive oil - 3 tablespoons
- Vegetable broth - 250 ml
- Parmesan cheese - 30 grams, grated
- Fresh mint leaves - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the shelled fava beans to the skillet and pour in the vegetable broth. Cook for about 5-7 minutes, or until the beans are tender.
- Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta and add it to the skillet with the fava beans.
- Toss everything together, adding a bit of the reserved pasta water if the mixture seems dry. Stir in the grated Parmesan cheese and chopped mint leaves. Season with salt and black pepper to taste.
- Serve immediately, garnished with additional Parmesan and mint if desired.
