- Cherry tomatoes - 200 grams, halved
- White wine - 100 ml
- Olive oil - 3 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, bring salted water to a boil and cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant but not browned, about 1-2 minutes.
- Add the cleaned mussels and halved cherry tomatoes to the skillet, followed by the white wine. Cover the skillet and let the mussels steam for about 5-7 minutes, or until they open up.
- Remove any mussels that have not opened and discard them. Stir in the cooked spaghetti and reserved pasta water, tossing everything together to coat the pasta evenly.
- Season with salt and black pepper to taste, and sprinkle with fresh parsley before serving.
