  • Vegetable broth - 200 ml
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and grated ginger to the skillet, sautéing for about 1 minute until fragrant.
  4. Add the julienned carrots to the skillet and sauté for 5-7 minutes, until they are tender but still slightly crisp.
  5. Pour in the vegetable broth and bring to a simmer, cooking for an additional 3-4 minutes to allow the flavors to meld.
  6. Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the pasta.
  7. Add the drained pasta to the skillet with the carrot and ginger mixture, tossing everything together. If needed, add a bit of the reserved pasta water to loosen the sauce.
  8. Season with salt and black pepper to taste, then remove from heat.
