- Parmesan cheese - 30 grams, grated

- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and grated ginger to the skillet, sautéing for about 1 minute until fragrant.
- Add the julienned carrots to the skillet and sauté for 5-7 minutes, until they are tender but still slightly crisp.
- Pour in the vegetable broth and bring to a simmer, cooking for an additional 3-4 minutes to allow the flavors to meld.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the pasta.
- Add the drained pasta to the skillet with the carrot and ginger mixture, tossing everything together. If needed, add a bit of the reserved pasta water to loosen the sauce.
- Season with salt and black pepper to taste, then remove from heat.
- Serve immediately, topped with grated Parmesan cheese and a sprinkle of chopped parsley.
