- Whole wheat lasagna noodles - 100 grams
- Olive oil - 1 tablespoon
- Zucchini - 1 medium, diced
- Spinach - 100 grams, fresh
- Ricotta cheese - 100 grams, part-skim
- Mozzarella cheese - 50 grams, shredded, part-skim
- Parmesan cheese - 30 grams, grated
- Garlic - 2 cloves, minced
- Italian seasoning - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Marinara sauce - 200 grams, low-sodium
Steps
- Preheat the oven to 180°C (350°F).
- Cook the whole wheat lasagna noodles according to the package instructions until al dente, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat and sauté the minced garlic for 1 minute until fragrant.
- Add the diced zucchini to the skillet and cook for about 5 minutes until tender, then stir in the fresh spinach and cook until wilted.
- In a mixing bowl, combine the ricotta cheese, Italian seasoning, salt, and black pepper, mixing well.
- In a baking dish, spread a thin layer of marinara sauce on the bottom, then layer 2 lasagna noodles, half of the ricotta mixture, half of the sautéed vegetables, and a sprinkle of mozzarella cheese.
- Repeat the layers with 2 more noodles, the remaining ricotta mixture, the remaining vegetables, and more marinara sauce, finishing with the last 2 noodles on top.
- Spread the remaining marinara sauce over the top layer and sprinkle with the remaining mozzarella and grated Parmesan cheese.
- Cover the dish with aluminum foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Let it cool for 5 minutes before slicing and serving.
