Ingredients

  • Pasta (tagliatelle or pappardelle) - 200 grams
  • Dried porcini mushrooms - 30 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallot - 1, finely chopped
  • Vegetable broth - 250 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Parmesan cheese (optional) - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the dried porcini mushrooms in 250 ml of warm water for about 15 minutes until softened. Drain, reserving the soaking liquid, and chop the mushrooms.
  2. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until translucent, about 3-4 minutes.
  4. Add the chopped porcini mushrooms to the skillet and cook for another 5 minutes until they start to brown.
  5. Pour in the reserved mushroom soaking liquid and vegetable broth, stirring to combine. Let it simmer for 5 minutes to reduce slightly.
  6. Add the cooked pasta to the skillet, tossing it in the sauce. If the mixture seems dry, add reserved pasta water as needed.
  7. Stir in the chopped parsley and season with salt and black pepper to taste.
  8. Serve hot, garnished with grated Parmesan cheese if desired.
