- Dried porcini mushrooms - 30 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Shallot - 1, finely chopped
- Vegetable broth - 250 ml
- Fresh parsley - 2 tablespoons, chopped
- Parmesan cheese (optional) - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
Steps
- Soak the dried porcini mushrooms in 250 ml of warm water for about 15 minutes until softened. Drain, reserving the soaking liquid, and chop the mushrooms.
- In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until translucent, about 3-4 minutes.
- Add the chopped porcini mushrooms to the skillet and cook for another 5 minutes until they start to brown.
- Pour in the reserved mushroom soaking liquid and vegetable broth, stirring to combine. Let it simmer for 5 minutes to reduce slightly.
- Add the cooked pasta to the skillet, tossing it in the sauce. If the mixture seems dry, add reserved pasta water as needed.
- Stir in the chopped parsley and season with salt and black pepper to taste.
- Serve hot, garnished with grated Parmesan cheese if desired.
