Ingredients
- Pasta (spaghetti or linguine) - 200 grams
- Cherry tomatoes - 300 grams, halved
- Garlic - 3 cloves, minced
- Olive oil - 3 tablespoons
- Fresh basil - 15 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/2 teaspoon (optional)
- Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the halved cherry tomatoes to the skillet and cook for about 5-7 minutes, stirring occasionally, until the tomatoes are soft and releasing their juices.
- Season the tomato mixture with salt, black pepper, and red pepper flakes if using. Stir in the reserved pasta water to create a light sauce.
- Add the cooked pasta to the skillet and toss to combine, ensuring the pasta is well coated with the sauce.
- Remove from heat and stir in the chopped fresh basil and nutritional yeast if using. Adjust seasoning as needed.
- Serve immediately, garnished with additional basil and a drizzle of olive oil if desired.
