Ingredients

  • Pasta (spaghetti or linguine) - 160 grams
  • Sun-dried tomatoes (packed in oil) - 100 grams, drained and chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh basil - 10 grams, chopped
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Stir in the chopped sun-dried tomatoes and red pepper flakes, cooking for an additional 2-3 minutes to combine the flavors.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest.
  6. Add the drained pasta to the skillet with the sun-dried tomato mixture, tossing to combine and adding reserved pasta water as needed to create a light sauce.
  7. Season with salt and black pepper to taste, and stir in the fresh basil and nutritional yeast if using.
  8. Serve immediately, garnished with extra basil if desired.
