  • Fresh basil leaves - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the fresh tomatoes to the skillet and cook for about 5-7 minutes, stirring occasionally, until the tomatoes start to soften and release their juices.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the tomatoes.
  5. In a bowl, mix the ricotta cheese with chopped basil, salt, and black pepper to taste. If the ricotta is too thick, add a little reserved pasta water to reach your desired consistency.
  6. Combine the pasta and tomato mixture with the ricotta sauce in the skillet, tossing gently to coat the pasta evenly. If needed, add more reserved pasta water to loosen the sauce.
  7. Serve immediately, topped with grated Parmesan cheese (if using) and additional fresh basil for garnish.
