Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Sun-dried tomatoes - 100 grams
  • Canned chopped tomatoes - 400 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh basil leaves - 10 leaves, torn
  • Parmesan cheese - 30 grams, grated (optional)
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the sun-dried tomatoes to the skillet and cook for another 2-3 minutes, allowing them to soften.
  4. Pour in the canned chopped tomatoes, stir well, and let the sauce simmer for about 10 minutes, allowing the flavors to meld. Season with salt, black pepper, and red pepper flakes if using.
  5. Add the cooked pasta to the skillet along with a splash of the reserved pasta water. Toss everything together until the pasta is well coated with the sauce.
  6. Remove from heat and stir in the fresh basil leaves. Serve immediately, topped with grated Parmesan cheese if desired.
