Ingredients

  • Pasta (spaghetti or fettuccine) - 160 grams
  • Fresh ripe tomatoes - 400 grams
  • Garlic - 2 cloves
  • Extra virgin olive oil - 2 tablespoons
  • Fresh basil leaves - 10 leaves
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parmesan cheese (optional) - 30 grams

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, rinse the fresh tomatoes and chop them into small pieces.
  3. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the chopped tomatoes to the skillet and sprinkle with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until the tomatoes soften and release their juices.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta cooking water, then drain the pasta.
  6. Add the drained pasta to the skillet with the tomato sauce. Toss everything together, adding a bit of reserved pasta water if necessary to create a silky sauce.
  7. Tear the fresh basil leaves and add them to the pasta, tossing to combine.
  8. Serve hot, garnished with grated Parmesan cheese if desired.
