  • Pasta (spaghetti or penne) - 200 grams
  • Fresh tomatoes (ripe) - 300 grams, diced
  • Extra virgin olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh basil leaves - 10 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parmesan cheese - 50 grams, grated
  • Mozzarella cheese - 100 grams, cubed

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  3. Add the diced tomatoes to the skillet and cook for about 5-7 minutes, stirring occasionally, until they start to soften and release their juices.
  4. Season the tomato mixture with salt and black pepper. Stir in the chopped basil and remove from heat.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water and then drain the pasta.
  6. Add the drained pasta to the skillet with the tomato and basil mixture. Toss everything together, adding reserved pasta water as needed to create a light sauce.
  7. Gently fold in the cubed mozzarella cheese and grated Parmesan until well combined and the mozzarella starts to melt.
  8. Serve immediately, garnished with extra basil and cheese, if desired.
