- Fresh basil leaves - 20 grams, roughly torn
- Garlic - 2 cloves, minced
- Extra virgin olive oil - 4 tablespoons
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional) - 30 grams, grated
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the diced tomatoes to the skillet, season with salt and black pepper, and cook for about 5-7 minutes until the tomatoes soften and release their juices.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water and then drain the pasta.
- Add the drained pasta to the skillet with the tomato mixture, tossing gently to combine. If the sauce is too thick, add some reserved pasta water until desired consistency is reached.
- Remove from heat and stir in the fresh basil leaves.
- Serve immediately, garnished with grated Parmesan cheese if desired.
