Ingredients
- Pasta (spaghetti or penne) - 200 grams
- Fresh ripe tomatoes - 400 grams, diced
- Garlic - 3 cloves, minced
- Extra virgin olive oil - 2 tablespoons
- Fresh basil leaves - 10 leaves, torn
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
- Nutritional yeast - 2 tablespoons (for a cheesy flavor, optional)
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced tomatoes to the skillet and season with salt, black pepper, and red pepper flakes if using. Cook for about 8-10 minutes, stirring occasionally, until the tomatoes break down and form a sauce.
- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the tomato sauce.
- Toss the pasta in the sauce, adding reserved pasta water a little at a time until the desired consistency is reached.
- Remove from heat, add the torn basil leaves, and toss to combine. Serve hot, optionally sprinkled with nutritional yeast for a cheesy flavor.
