  • Frozen peas - 150 grams
  • Extra virgin olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Vegetable broth - 300 ml
  • Fresh basil leaves - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  4. Add the frozen peas and vegetable broth to the skillet and bring to a simmer. Cook for about 5 minutes until the peas are tender.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the peas.
  6. Toss the pasta in the skillet, adding reserved pasta water a little at a time until you achieve the desired sauce consistency.
  7. Stir in the chopped basil, salt, black pepper, and nutritional yeast (if using). Mix well and cook for another minute.
  8. Serve hot, garnished with additional basil if desired.
