- Yellow bell pepper - 1 large (about 200 grams)
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Fresh basil - 10 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Nutritional yeast - 2 tablespoons (for a cheesy flavor)
Steps
- Preheat your oven to 200°C (400°F).
- Slice the red and yellow bell peppers into thin strips and place them on a baking sheet.
- Drizzle the sliced peppers with 1 tablespoon of olive oil, sprinkle with salt and black pepper, and toss to coat evenly.
- Roast the peppers in the preheated oven for 20 minutes, or until they are tender and slightly caramelized.
- While the peppers are roasting, cook the pasta according to package instructions in a large pot of salted boiling water until al dente.
- In a frying pan, heat the remaining tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Once the pasta is cooked, reserve about 1/2 cup of pasta water, then drain the pasta.
- Add the roasted peppers to the frying pan with garlic, then add the cooked pasta, fresh basil, and nutritional yeast. Toss everything together, adding reserved pasta water as needed to create a light sauce.
- Serve hot, garnished with additional fresh basil and a sprinkle of red pepper flakes if desired.
