Ingredients

  • Pasta (e.g., fettuccine) - 160 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Zucchini - 1 medium, sliced
  • Mushrooms (e.g., cremini) - 200 grams, sliced
  • Vegetable broth - 150 milliliters
  • Parmesan cheese - 30 grams, grated (optional)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  3. Add the sliced zucchini to the skillet and cook for about 3-4 minutes until it starts to soften.
  4. Add the sliced mushrooms to the skillet and continue cooking for another 5-6 minutes until they are tender and browned.
  5. Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for an additional 2-3 minutes to allow the flavors to meld.
  6. Once the pasta is cooked, reserve 50 milliliters of the pasta water, then drain the pasta and add it to the skillet with the vegetable mixture.
  7. Toss everything together, adding reserved pasta water if needed to create a light sauce. Season with salt and black pepper to taste.
  8. Serve hot, garnished with grated Parmesan cheese (if using) and chopped fresh parsley.
