Ingredients
- Pasta (e.g., fettuccine) - 160 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Zucchini - 1 medium, sliced
- Mushrooms (e.g., cremini) - 200 grams, sliced
- Vegetable broth - 150 milliliters
- Parmesan cheese - 30 grams, grated (optional)
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the sliced zucchini to the skillet and cook for about 3-4 minutes until it starts to soften.
- Add the sliced mushrooms to the skillet and continue cooking for another 5-6 minutes until they are tender and browned.
- Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for an additional 2-3 minutes to allow the flavors to meld.
- Once the pasta is cooked, reserve 50 milliliters of the pasta water, then drain the pasta and add it to the skillet with the vegetable mixture.
- Toss everything together, adding reserved pasta water if needed to create a light sauce. Season with salt and black pepper to taste.
- Serve hot, garnished with grated Parmesan cheese (if using) and chopped fresh parsley.
