  • Garlic - 2 cloves, minced
  • Olive oil - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Pine nuts - 30 grams, toasted
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - for serving

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes, or until they are tender and golden brown. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. In a small bowl, combine the chopped parsley, basil, lemon juice, toasted pine nuts, and the remaining tablespoon of olive oil. Season with salt and black pepper to taste, then mix well to create the salsa verde.
  4. Add the cooked pasta to the skillet with the mushrooms and toss to combine. If the pasta seems dry, add a bit of the reserved pasta water until you reach your desired consistency.
  5. Remove the skillet from heat and fold in the salsa verde. Toss everything together until the pasta is well coated.
  6. Serve hot, garnished with additional pine nuts and grated Parmesan cheese if desired.
