- Parmesan cheese - 30 grams, grated
- Fresh parsley - 2 tablespoons, chopped

- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
- Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are browned and tender.
- Pour in the vegetable broth and let it simmer for about 3 minutes, allowing the flavors to meld.
- In a mixing bowl, combine the ricotta cheese, lemon juice, salt, and black pepper. Mix until smooth and creamy.
- Once the pasta is cooked, reserve about 50 ml of pasta water, then drain the pasta and add it to the skillet with the mushrooms.
- Add the ricotta mixture to the pasta and mushrooms, stirring to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Stir in the chopped parsley and grated Parmesan cheese. Adjust seasoning if necessary.
- Serve the pasta hot, garnished with extra Parmesan and parsley if desired.
