  • Vegetable broth - 100 ml
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
  3. Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are browned and tender.
  4. Pour in the vegetable broth and let it simmer for about 3 minutes, allowing the flavors to meld.
  5. In a mixing bowl, combine the ricotta cheese, lemon juice, salt, and black pepper. Mix until smooth and creamy.
  6. Once the pasta is cooked, reserve about 50 ml of pasta water, then drain the pasta and add it to the skillet with the mushrooms.
  7. Add the ricotta mixture to the pasta and mushrooms, stirring to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  8. Stir in the chopped parsley and grated Parmesan cheese. Adjust seasoning if necessary.
  9. Serve the pasta hot, garnished with extra Parmesan and parsley if desired.
