- Cherry tomatoes - 200 grams, halved
- Garlic - 2 cloves, minced
- Extra virgin olive oil - 3 tablespoons
- Fresh basil leaves - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional) - for serving
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are golden brown and tender.
- Stir in the halved cherry tomatoes and cook for another 3-4 minutes until they start to soften. Season with salt and black pepper to taste.
- Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta.
- Add the drained pasta to the skillet with the mushroom and tomato mixture. Toss everything together, adding a little reserved pasta water if the mixture seems dry.
- Remove from heat, stir in the chopped basil, and adjust seasoning if necessary.
- Serve hot, topped with grated Parmesan cheese if desired.
