Ingredients

  • Pasta (spaghetti or fettuccine) - 160 grams
  • Mixed mushrooms (cremini, shiitake, and oyster) - 200 grams, sliced
  • Garlic - 4 cloves, minced
  • Olive oil - 3 tablespoons
  • Vegetable broth - 200 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the sliced mushrooms to the skillet and cook for about 5-7 minutes, until they are tender and have released their moisture.
  4. Pour in the vegetable broth and bring to a simmer. Allow it to cook for another 5 minutes, letting the flavors meld together.
  5. Add the cooked pasta to the skillet and toss to combine. Season with salt, black pepper, and optional nutritional yeast to taste.
  6. Remove from heat and stir in the chopped parsley. Serve immediately, garnished with additional parsley if desired.
