- Garlic - 2 cloves, minced
- Olive oil - 3 tablespoons
- Vegetable broth - 200 ml
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil, then add the pasta and cook according to package instructions until al dente.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced artichokes to the skillet and cook for 5-7 minutes, stirring occasionally until they are tender and slightly golden.
- Pour in the vegetable broth and lemon juice, and let the mixture simmer for another 5 minutes to combine the flavors.
- Once the pasta is done, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the artichoke mixture.
- Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.
- Season with salt, black pepper, and red pepper flakes to taste.
- Remove from heat, garnish with chopped parsley, and serve immediately.
