  • Artichokes (fresh or canned) - 200 grams, trimmed and sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 3 tablespoons
  • Vegetable broth - 200 ml
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil, then add the pasta and cook according to package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sliced artichokes to the skillet and cook for 5-7 minutes, stirring occasionally until they are tender and slightly golden.
  4. Pour in the vegetable broth and lemon juice, and let the mixture simmer for another 5 minutes to combine the flavors.
  5. Once the pasta is done, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the artichoke mixture.
  6. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.
  7. Season with salt, black pepper, and red pepper flakes to taste.
  8. Remove from heat, garnish with chopped parsley, and serve immediately.
