Ingredients

  • Pasta (spaghetti or orecchiette) - 160 grams
  • Broccoletti (or broccoli rabe) - 200 grams
  • Garlic - 3 cloves, minced
  • Olive oil - 3 tablespoons
  • Red chili flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Nutritional yeast (optional) - 2 tablespoons

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes.
  2. While the pasta is cooking, trim the broccoletti, removing any tough stems, and chop into smaller pieces.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the broccoletti to the skillet, along with the red chili flakes, and sauté for about 5-7 minutes until the broccoletti is tender but still vibrant green.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the broccoletti.
  6. Toss everything together, adding reserved pasta water as needed to create a light sauce. Season with salt and black pepper to taste.
  7. Finish with a squeeze of lemon juice and sprinkle with nutritional yeast if using. Serve immediately.
