  • Zucchini - 1 medium (about 200 grams)
  • Fresh crab meat - 100 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - a pinch (optional)

Steps

  1. Bring a pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, wash and slice the zucchini into thin rounds.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the sliced zucchini to the skillet and cook for about 5-7 minutes, stirring occasionally, until the zucchini is tender but still retains some crunch.
  5. Once the pasta is done, reserve 1/2 cup of pasta water and drain the rest. Add the drained pasta to the skillet with the zucchini.
  6. Add the fresh crab meat, lemon juice, and reserved pasta water to the skillet. Toss everything together gently to combine, allowing the crab to warm through.
  7. Season with salt, black pepper, and red pepper flakes if using. Stir in the chopped parsley just before serving.
