- Fresh crab meat - 100 grams
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - a pinch (optional)
Steps
- Bring a pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, wash and slice the zucchini into thin rounds.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced zucchini to the skillet and cook for about 5-7 minutes, stirring occasionally, until the zucchini is tender but still retains some crunch.
- Once the pasta is done, reserve 1/2 cup of pasta water and drain the rest. Add the drained pasta to the skillet with the zucchini.
- Add the fresh crab meat, lemon juice, and reserved pasta water to the skillet. Toss everything together gently to combine, allowing the crab to warm through.
- Season with salt, black pepper, and red pepper flakes if using. Stir in the chopped parsley just before serving.
