Ingredients

  • Whole wheat gnocchi - 250 grams
  • Cherry tomatoes - 200 grams, halved
  • Fresh spinach - 100 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Parmesan cheese - 30 grams, grated
  • Basil - 10 grams, fresh, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, bring salted water to a boil. Add the whole wheat gnocchi and cook according to package instructions, usually around 2-3 minutes until they float to the surface.
  2. While the gnocchi is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook for 5-7 minutes until they start to soften and release their juices.
  4. Stir in the fresh spinach and cook for another 2-3 minutes until wilted. Season with salt and black pepper to taste.
  5. Once the gnocchi is cooked, drain and add it to the skillet with the tomato and spinach mixture. Gently toss to combine all the ingredients.
  6. Remove from heat and sprinkle with grated Parmesan cheese and fresh basil before serving.
