- Whole wheat gnocchi - 250 grams
- Cherry tomatoes - 200 grams, halved
- Fresh spinach - 100 grams
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Parmesan cheese - 30 grams, grated
- Basil - 10 grams, fresh, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, bring salted water to a boil. Add the whole wheat gnocchi and cook according to package instructions, usually around 2-3 minutes until they float to the surface.
- While the gnocchi is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for 5-7 minutes until they start to soften and release their juices.
- Stir in the fresh spinach and cook for another 2-3 minutes until wilted. Season with salt and black pepper to taste.
- Once the gnocchi is cooked, drain and add it to the skillet with the tomato and spinach mixture. Gently toss to combine all the ingredients.
- Remove from heat and sprinkle with grated Parmesan cheese and fresh basil before serving.
