  • Spaghetti - 160 grams
  • Fresh shrimp - 200 grams, peeled and deveined
  • Garlic - 3 cloves, minced
  • Extra virgin olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque, stirring occasionally.
  4. Stir in the lemon juice, lemon zest, and red pepper flakes (if using) into the skillet. Season with salt and black pepper to taste.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta water and then drain the spaghetti.
  6. Add the drained spaghetti to the skillet with the shrimp and toss everything together. If the dish seems dry, add some reserved pasta water until desired consistency is reached.
  7. Remove from heat and stir in the chopped parsley. Serve immediately, garnished with additional parsley and a squeeze of lemon if desired.
