- Cherry tomatoes (halved) - 100 grams
- Fresh parsley (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - a pinch (optional)
Steps
- Bring a pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the shrimp to the skillet and cook for about 3-4 minutes, or until they turn pink and opaque.
- Stir in the cherry tomatoes and cook for another 2 minutes until they soften slightly.
- Season the mixture with salt, pepper, and red pepper flakes if using, then add the lemon juice and chopped parsley.
- Once the pasta is cooked, reserve a cup of pasta water and then drain the spaghetti.
- Add the drained spaghetti to the skillet with the shrimp and toss well to combine, adding reserved pasta water as needed to create a light sauce.
- Serve immediately, garnished with additional parsley if desired.
