Ingredients

  • Spaghetti - 150 grams
  • Shrimp (peeled and deveined) - 200 grams

  • Olive oil - 3 tablespoons
  • Cherry tomatoes (halved) - 100 grams
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - a pinch (optional)

Steps

  1. Bring a pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the shrimp to the skillet and cook for about 3-4 minutes, or until they turn pink and opaque.
  5. Stir in the cherry tomatoes and cook for another 2 minutes until they soften slightly.
  6. Season the mixture with salt, pepper, and red pepper flakes if using, then add the lemon juice and chopped parsley.
  7. Once the pasta is cooked, reserve a cup of pasta water and then drain the spaghetti.
  8. Add the drained spaghetti to the skillet with the shrimp and toss well to combine, adding reserved pasta water as needed to create a light sauce.
  9. Serve immediately, garnished with additional parsley if desired.
