Ingredients

  • Spaghetti - 150 grams
  • Shrimp, peeled and deveined - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Cherry tomatoes, halved - 150 grams
  • Lemon juice - 2 tablespoons
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the shrimp to the skillet and cook for about 3-4 minutes until they are pink and opaque.
  5. Stir in the halved cherry tomatoes and cook for an additional 2 minutes until they are slightly softened.
  6. Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest.
  7. Add the drained pasta to the skillet with the shrimp and tomatoes, along with the reserved pasta water, lemon juice, chopped parsley, salt, black pepper, and red pepper flakes if using.
  8. Toss everything together over medium heat for about 1-2 minutes until well combined and heated through.
  9. Serve immediately, garnished with extra parsley if desired.
