Ingredients

  • Pasta (spaghetti or fettuccine) - 150 grams
  • Mixed mushrooms (cremini, shiitake, and button) - 200 grams, sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional, kosher) - 30 grams, grated

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the sliced mushrooms to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are browned and tender.
  5. Once the pasta is done, reserve 1/2 cup of the pasta cooking water and drain the rest.
  6. Add the drained pasta to the skillet with the mushrooms and garlic, then mix well.
  7. If the pasta seems dry, add a little reserved pasta water until desired consistency is reached.
  8. Season with salt and black pepper to taste, and stir in freshly chopped parsley.
  9. Serve immediately, topped with grated Parmesan cheese if desired.
