- Prawns - 100 grams, peeled and deveined
- Mussels - 100 grams, cleaned
- Squid - 100 grams, cleaned and sliced
- Vegetable broth - 200 milliliters
- Lemon - 1, juiced
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the cherry tomatoes, salt, black pepper, and red pepper flakes to the skillet. Cook for about 5 minutes until the tomatoes soften and release their juices.
- Add the prawns, mussels, and squid to the skillet, stirring to combine. Pour in the vegetable broth and bring to a simmer. Cook for about 5-7 minutes until the seafood is cooked through and mussels have opened.
- Stir in the cooked spaghetti and reserved pasta water, mixing everything well. Allow to cook for another 1-2 minutes to combine the flavors.
- Remove from heat and stir in the fresh parsley and lemon juice. Adjust seasoning if needed.
- Serve immediately, garnished with additional parsley if desired.
