Ingredients

  • Spaghetti - 160 grams
  • Olive oil - 3 tablespoons
  • Garlic - 4 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon
  • Prawns - 100 grams, peeled and deveined
  • Mussels - 100 grams, cleaned
  • Squid - 100 grams, cleaned and sliced
  • Vegetable broth - 200 milliliters
  • Lemon - 1, juiced

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the cherry tomatoes, salt, black pepper, and red pepper flakes to the skillet. Cook for about 5 minutes until the tomatoes soften and release their juices.
  4. Add the prawns, mussels, and squid to the skillet, stirring to combine. Pour in the vegetable broth and bring to a simmer. Cook for about 5-7 minutes until the seafood is cooked through and mussels have opened.
  5. Stir in the cooked spaghetti and reserved pasta water, mixing everything well. Allow to cook for another 1-2 minutes to combine the flavors.
  6. Remove from heat and stir in the fresh parsley and lemon juice. Adjust seasoning if needed.
  7. Serve immediately, garnished with additional parsley if desired.
