Ingredients

  • Whole wheat pasta - 150 grams
  • Eggs - 4 large
  • Zucchini - 100 grams, diced
  • Red bell pepper - 50 grams, diced
  • Spinach - 50 grams, fresh
  • Parmesan cheese - 30 grams, grated
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - a handful, chopped

Steps

  1. Bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced zucchini and red bell pepper to the skillet. Cook for 5-7 minutes until they are tender.
  4. Stir in the fresh spinach and cook until wilted. Season with salt and black pepper. Remove the vegetable mixture from the skillet and set aside.
  5. In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and chopped basil. Add the cooked vegetables to the egg mixture and stir to combine.
  6. Wipe the skillet clean and add the remaining tablespoon of olive oil. Pour the egg and vegetable mixture into the skillet and cook over medium-low heat for about 5-7 minutes until the edges are set.
  7. Once the edges have set, carefully slide the frittata under a broiler for 3-5 minutes until the top is golden and fully cooked.
  8. To serve, place the cooked pasta on plates and top with slices of frittata. Garnish with additional basil and Parmesan if desired.
