- Whole wheat pasta - 150 grams
- Eggs - 4 large
- Zucchini - 100 grams, diced
- Red bell pepper - 50 grams, diced
- Spinach - 50 grams, fresh
- Parmesan cheese - 30 grams, grated
- Olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil - a handful, chopped
Steps
- Bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced zucchini and red bell pepper to the skillet. Cook for 5-7 minutes until they are tender.
- Stir in the fresh spinach and cook until wilted. Season with salt and black pepper. Remove the vegetable mixture from the skillet and set aside.
- In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and chopped basil. Add the cooked vegetables to the egg mixture and stir to combine.
- Wipe the skillet clean and add the remaining tablespoon of olive oil. Pour the egg and vegetable mixture into the skillet and cook over medium-low heat for about 5-7 minutes until the edges are set.
- Once the edges have set, carefully slide the frittata under a broiler for 3-5 minutes until the top is golden and fully cooked.
- To serve, place the cooked pasta on plates and top with slices of frittata. Garnish with additional basil and Parmesan if desired.
