  • Grated Parmesan cheese - 100 grams
  • Grated Pecorino cheese - 50 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Bring a large pot of salted water to a boil and cook the fusilli pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. In a separate saucepan, melt the butter over medium heat until bubbly.
  3. Add the flour to the melted butter and whisk continuously for about 2 minutes to create a roux, which should be light golden in color.
  4. Gradually pour in the milk while whisking, ensuring there are no lumps. Continue to cook, stirring, until the mixture thickens, about 5 minutes.
