- Grated Pecorino cheese - 50 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Bring a large pot of salted water to a boil and cook the fusilli pasta according to package instructions until al dente, usually about 8-10 minutes.
- In a separate saucepan, melt the butter over medium heat until bubbly.
- Add the flour to the melted butter and whisk continuously for about 2 minutes to create a roux, which should be light golden in color.
- Gradually pour in the milk while whisking, ensuring there are no lumps. Continue to cook, stirring, until the mixture thickens, about 5 minutes.
- Reduce the heat to low and stir in the grated Parmesan and Pecorino cheeses until melted and smooth.
