Ingredients

  • Pasta (e.g., spaghetti or orecchiette) - 160 grams
  • Fava beans (fresh or frozen) - 200 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 200 ml
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - optional, to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the fava beans to the skillet and pour in the vegetable broth. Simmer for about 5-7 minutes until the beans are tender.
  4. Using a fork or a potato masher, partially mash the fava beans to create a creamy texture, then add the cooked pasta to the skillet.
  5. Stir in the reserved pasta water, lemon juice, chopped parsley, salt, and black pepper. Mix well until the pasta is coated and heated through.
  6. Serve hot, garnished with additional parsley and red pepper flakes if desired.
