  • Algae (dried nori or wakame) - 10 grams
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (for garnish) - a handful, chopped

Steps

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and reserve some pasta water.
  2. In a pan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. In a blender, combine the walnuts, nutritional yeast, sautéed garlic, lemon juice, and a pinch of salt and pepper. Blend until smooth, adding a little reserved pasta water to reach a creamy consistency.
  4. If using dried algae, soak it in warm water for 10 minutes until rehydrated, then chop it into small pieces.
  5. In the pan with the garlic oil, add the cooked pasta, walnut cream, and chopped algae. Toss to combine, adding more pasta water if needed to achieve the desired creaminess.
  6. Season with additional salt and pepper to taste. Serve immediately, garnished with fresh parsley.
