Steps
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain and reserve some pasta water.
- In a pan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- In a blender, combine the walnuts, nutritional yeast, sautéed garlic, lemon juice, and a pinch of salt and pepper. Blend until smooth, adding a little reserved pasta water to reach a creamy consistency.
- If using dried algae, soak it in warm water for 10 minutes until rehydrated, then chop it into small pieces.
- In the pan with the garlic oil, add the cooked pasta, walnut cream, and chopped algae. Toss to combine, adding more pasta water if needed to achieve the desired creaminess.
- Season with additional salt and pepper to taste. Serve immediately, garnished with fresh parsley.
