Ingredients
- Pasta (spaghetti or linguine) - 200 grams
- Fresh mussels - 500 grams
- Cherry tomatoes - 200 grams, halved
- Garlic - 3 cloves, minced
- Olive oil - 3 tablespoons
- White wine - 100 ml
- Fresh parsley - 2 tablespoons, chopped
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the mussels under cold water, scrubbing the shells to remove any debris and discarding any that are open or damaged.
- In a large pot, bring salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water before draining.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
- Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
- Pour in the white wine and bring to a simmer. Add the mussels to the skillet, cover with a lid, and cook for 5-7 minutes until the mussels open up.
- Remove the lid, discarding any mussels that did not open. Add the drained pasta to the skillet, tossing well to combine with the mussels and sauce.
- If needed, add a splash of the reserved pasta water to loosen the sauce. Season with salt and black pepper to taste.
- Remove from heat, stir in the chopped parsley, and serve immediately.
