Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Fresh mussels - 500 grams
  • Cherry tomatoes - 200 grams, halved
  • Garlic - 3 cloves, minced
  • Olive oil - 3 tablespoons
  • White wine - 100 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the mussels under cold water, scrubbing the shells to remove any debris and discarding any that are open or damaged.
  2. In a large pot, bring salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water before draining.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
  4. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  5. Pour in the white wine and bring to a simmer. Add the mussels to the skillet, cover with a lid, and cook for 5-7 minutes until the mussels open up.
  6. Remove the lid, discarding any mussels that did not open. Add the drained pasta to the skillet, tossing well to combine with the mussels and sauce.
  7. If needed, add a splash of the reserved pasta water to loosen the sauce. Season with salt and black pepper to taste.
  8. Remove from heat, stir in the chopped parsley, and serve immediately.
