  • Cherry tomatoes - 150 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the cleaned mussels to the skillet and toss them in the garlic oil. Cover the skillet with a lid and cook for about 5-7 minutes, or until the mussels have opened up.
  4. Add the halved cherry tomatoes to the skillet and stir gently. Season with salt and black pepper to taste. Cook for an additional 2-3 minutes until the tomatoes are slightly softened.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the spaghetti. Add the drained pasta to the skillet with the mussels and tomatoes.
  6. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency. Stir in the fresh parsley and lemon juice.
  7. Serve immediately, garnished with additional parsley if desired.
