  • Vegetable broth - 200 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 100 ml of pasta water before draining.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the sliced onions to the skillet and sauté for about 15-20 minutes, stirring occasionally, until they are caramelized and golden brown.
  4. Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
  5. Pour in the vegetable broth and bring to a simmer. If needed, add reserved pasta water to reach desired sauce consistency.
  6. Season the onion mixture with salt, black pepper, and red pepper flakes (if using).
  7. Add the drained pasta to the skillet, tossing well to combine with the onion sauce.
  8. Serve hot, garnished with chopped fresh parsley.
