- Nutritional yeast - 2 tablespoons (for a cheesy flavor)
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta cooks, rinse the cavolo nero thoroughly and remove the tough stems. Chop the leaves into bite-sized pieces.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red chili flakes (if using) and sauté for about 1 minute until fragrant, being careful not to burn the garlic.
- Add the chopped cavolo nero to the skillet and sauté for 3-4 minutes until it begins to wilt.
- Pour in the vegetable broth, season with salt and black pepper, and let it simmer for about 5 minutes until the cavolo nero is tender and the broth has reduced slightly.
- Once the pasta is cooked, reserve about 1/2 cup of the pasta cooking water and then drain the pasta.
- Add the drained pasta to the skillet with the cavolo nero mixture. Toss everything together, adding a little reserved pasta water if needed to help combine.
- Sprinkle the nutritional yeast over the pasta, add lemon juice, and toss again to combine. Adjust seasoning to taste.
