  • Red pepper flakes - 1/4 teaspoon
  • Vegetable broth - 250 ml
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  3. Add the chopped kale to the skillet and sauté for 3-4 minutes until wilted, stirring occasionally.
  4. Pour in the vegetable broth and bring to a simmer. Cook for an additional 5 minutes until the kale is tender and the broth has reduced slightly.
  5. Add the cooked pasta to the skillet, along with lemon juice, salt, and black pepper. Toss everything together until well combined and heated through.
  6. Serve topped with chopped fresh parsley.
