  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  3. Add the chopped cauliflower florets to the skillet, stirring well to coat with the garlic and oil. Cook for about 5-7 minutes until the cauliflower is tender and slightly golden, stirring occasionally.

  5. Combine the drained pasta with the cauliflower and tomato mixture. If the dish seems dry, add reserved pasta water a little at a time until the desired consistency is reached.
  6. Stir in the fresh basil and nutritional yeast if using. Adjust seasoning if necessary and serve immediately, garnished with additional basil.
