Ingredients

  • Pasta (e.g., orecchiette) - 150 grams
  • Cauliflower - 200 grams, cut into small florets
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Red chili flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Parmesan cheese - 30 grams, grated (optional, check for kosher certification)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. In the last 5 minutes of pasta cooking time, add the cauliflower florets to the boiling water with the pasta.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red chili flakes, sautéing until fragrant, about 1 minute.
  4. Once the pasta and cauliflower are cooked, drain them, reserving about 1/2 cup of the pasta water.
  5. Add the drained pasta and cauliflower to the skillet with garlic. Toss to combine, adding reserved pasta water as needed to create a light sauce.
  6. Season with salt and black pepper to taste, and stir in the chopped parsley.
  7. Serve hot, topped with grated Parmesan cheese if desired.
