  • Onion - 1 small, finely chopped
  • Vegetable broth - 200 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast (optional) - 2 tablespoons

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, peel and julienne the carrots into thin strips.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  4. Add the minced garlic and sauté for an additional minute until fragrant.
  5. Stir in the julienned carrots and cook for about 5-7 minutes, stirring occasionally, until they are tender.
  6. Pour in the vegetable broth and let it simmer for 3-4 minutes, allowing the flavors to meld.
  7. Add the cooked pasta to the skillet with the carrot mixture. Toss to combine, ensuring the pasta is well-coated in the sauce.
  8. Season with salt, black pepper, and nutritional yeast (if using), then stir in the chopped parsley just before serving.
  9. Serve hot, garnished with extra parsley if desired.
