- Vegetable broth - 200 milliliters
- Fresh parsley - 2 tablespoons, chopped

- Black pepper - to taste
- Nutritional yeast (optional) - 2 tablespoons
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- While the pasta is cooking, peel and julienne the carrots into thin strips.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the julienned carrots and cook for about 5-7 minutes, stirring occasionally, until they are tender.
- Pour in the vegetable broth and let it simmer for 3-4 minutes, allowing the flavors to meld.
- Add the cooked pasta to the skillet with the carrot mixture. Toss to combine, ensuring the pasta is well-coated in the sauce.
- Season with salt, black pepper, and nutritional yeast (if using), then stir in the chopped parsley just before serving.
- Serve hot, garnished with extra parsley if desired.
