  • Frozen peas - 100 grams
  • Garlic - 2 cloves, minced
  • Extra virgin olive oil - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - 30 grams, grated

Steps

  1. Prepare the artichokes by trimming the stems, removing the tough outer leaves, and cutting them in half. Scoop out the choke and slice them into thin wedges.
  2. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, but not browned.
  4. Add the sliced artichokes to the skillet and cook for 5-7 minutes, stirring occasionally, until they become tender.
  5. Stir in the frozen peas and cook for an additional 3-4 minutes until heated through.
  6. Add the cooked pasta to the skillet along with the reserved pasta water. Toss everything together to combine, adding lemon juice, salt, and pepper to taste.
  7. Remove from heat and stir in the chopped parsley. If desired, sprinkle with grated Parmesan cheese before serving.
