- Parmesan cheese (optional) - 30 grams, grated
Steps
- Prepare the artichokes by trimming the stems, removing the tough outer leaves, and cutting them in half. Scoop out the choke and slice them into thin wedges.
- In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, but not browned.
- Add the sliced artichokes to the skillet and cook for 5-7 minutes, stirring occasionally, until they become tender.
- Stir in the frozen peas and cook for an additional 3-4 minutes until heated through.
- Add the cooked pasta to the skillet along with the reserved pasta water. Toss everything together to combine, adding lemon juice, salt, and pepper to taste.
- Remove from heat and stir in the chopped parsley. If desired, sprinkle with grated Parmesan cheese before serving.
