- Pecorino Romano cheese - 50 grams, grated
- Garlic - 2 cloves, minced
- Extra virgin olive oil - 3 tablespoons
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Fill a pot with water, add salt, and bring it to a boil. Cook the pasta according to package instructions until al dente, then drain, reserving 1/2 cup of the pasta water.
- While the pasta cooks, prepare the artichokes by trimming the tough outer leaves and cutting them in half. Remove the fuzzy center and slice them thinly.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced artichokes to the skillet and cook for about 8-10 minutes, stirring occasionally, until they are tender and lightly browned.
- Once the artichokes are done, add the cooked pasta to the skillet. Pour in the reserved pasta water and lemon juice, then toss to combine.
- Remove the skillet from heat and stir in the grated Pecorino cheese. Season with salt and black pepper to taste.
- Serve the pasta hot, garnished with fresh parsley and additional Pecorino cheese if desired.
