Ingredients

  • Pasta (spaghetti or linguine) - 180 grams
  • Artichoke hearts (canned or frozen) - 200 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 3 tablespoons
  • Lemon (zest and juice) - 1 medium
  • Fresh parsley - 2 tablespoons, chopped
  • Nutritional yeast - 2 tablespoons
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water and drain the rest.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the artichoke hearts to the skillet and cook for 5-7 minutes, stirring occasionally, until they are heated through and starting to brown.
  4. Stir in the lemon zest and juice, along with the reserved pasta cooking water. Allow the mixture to simmer for 2-3 minutes to combine the flavors.
  5. Add the cooked pasta to the skillet and toss gently to coat it in the sauce. Mix in the nutritional yeast, chopped parsley, and red pepper flakes (if using). Season with salt and black pepper to taste.
  6. Serve immediately, garnished with additional parsley and a sprinkle of nutritional yeast if desired.
