- Spaghetti - 150 grams
- Fresh artichokes - 2 medium
- Garlic - 2 cloves
- Olive oil - 4 tablespoons
- Lemon - 1 (juice only)
- Parmesan cheese - 30 grams (grated)
- Fresh parsley - 2 tablespoons (chopped)
- Salt - to taste
- Black pepper - to taste
Steps
- Fill a large pot with water, add salt, and bring to a boil. Add the spaghetti and cook according to package instructions until al dente.
- While the pasta is cooking, prepare the artichokes. Trim the stems and remove the tough outer leaves. Cut the artichokes in half, remove the choke, and slice thinly.
- In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the sliced artichokes to the skillet and sauté for about 5-7 minutes, until they are tender and lightly golden. Season with salt and pepper.
- Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta and add it to the skillet with the artichokes.
- Add the lemon juice and a splash of reserved pasta water to the skillet. Toss everything together over low heat, allowing the pasta to absorb the flavors.
- Remove from heat and stir in the grated Parmesan cheese and chopped parsley. Adjust seasoning as needed.
- Serve hot, garnished with additional parsley and Parmesan if desired.
