  • Red pepper flakes - 1/4 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon (zested and juiced) - 1 medium
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Add the rinsed capers to the skillet and sauté for an additional 2 minutes.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta.
  6. Add the drained pasta to the skillet with the capers and garlic, tossing to combine.
  7. If the pasta seems dry, add a bit of the reserved pasta water to reach your desired consistency.
  8. Stir in the lemon juice, lemon zest, chopped parsley, salt, and black pepper to taste.
  9. Serve immediately, garnished with extra parsley if desired.
